Avocado and Grapefruit Salad

Ingredients:

  • 8 cup(s) lettuce, mixed greens, torn
  • 2 grapefruit, peeled and sectioned
  • 1 avocado, pitted, peeled, and sliced
  • 2 tablespoon vinegar, raspberry
  • 2 tablespoon avocado oil, or olive oil
  • 1 tablespoon water
  • 1 teaspoon sugar
  • 1/8 teaspoon salt

Arrange the greens, grapefruit and avocado in a bowl.  For dressing, in a small bowl whisk together raspberry vinegar, avocado or olive oil, the water, sugar, and salt. Drizzle over the salad mixture.

Grapefruit and Avocado Salad

Mmmm!  From AllRecipes.com:

  • 1 cup cucumber or jicama cut in 1-inch matchsticks
  • 1/2 cup thinly sliced red onion
  • 1 large grapefruit, sectioned, reserving juice
  • 2 fully ripened Avocados from Mexico, halved, pitted, and sliced
  • 1 tablespoon olive oil
  • 2 teaspoons honey
  • 1 1/2 tablespoons minced jalapeno peppers
  • 1/4 teaspoon salt
  • 8 romaine lettuce leaves
  1. In a small bowl, combine cucumber and onion.
  2. In a medium bowl, place 3 tablespoons grapefruit juice with oil, honey, jalapeno and salt.
  3. Add cucumber mixture; toss. Add grapefruit sections and sliced Avocado; toss gently.
  4. Divide Romaine among 4 serving plates. Top with Avocado and grapefruit mixture.

Can grapefruits reverse damage from a fast food meal?

I LOVE GRAPEFRUITS!  When they are in season (aka cheap) I can eat about 2 or 3 pamplemousses a day.  A component in grapefruits, a flavonoid, can stimulate your liver to process calories and fat from a fatty meal. Say what?  A study from the University of Western Ontario, in London says so yesterday.  The flavonoid naringenin in grapefruit has been shown to reduce fat buildup by 80 per cent in mice fed a steady stream of lard and sugar-laden foods.  Because this flavonoid is naturally occurring in the fruit, “… the likelihood of any untoward safety issues might be greatly diminished,” says Murray Huff, Western’s Robarts Research Institute. (Note: I read before that taking blood pressure medication with a diet that contains grapefruit is bad.  It can stop the effects of some medication!!!)

Don’t go eating grapefruits like mad!  You would have to drink 6 or 8 glasses of juice a day to get the same benefits the mice did in the study.  The mice showed decreases in cholesterol and triglycerides, meaning that after a fatty meal and the flavonoid, the mice showed little evidence of having eaten that fatty meal and did not put on as much weight as the control group.  It is suggested that the flavonoid turns on a liver enzyme, which the fatty meal turned off.  The fatty meal is processed to energy rather than stored as fat.
