Jamie Eason’s Chicken Meatloaf Muffins

Here’s Jamie Eason’s Chicken Meatloaf Muffins (she has a video!).  Enjoy!

1/2 tsp. ground cumin
1/2 tsp. dried thyme, crushed
2 tsp. dry yellow mustard
2 tsp. black pepper
2 tsp. McCormick’s Chipotle Pepper Spice (spicy, but key to the recipe)
1 tsp. salt
1 cup quick cooking oats
2 cloves garlic, minced (or 2 tbsp of garlic powder)
1 small onion, finely chopped (I get the pre chopped version or even the frozen – thawed)
2 stalks celery, finely chopped
3 egg whites
1 1/2 – 2 lbs. ground chicken breast (I use 3 packages)

Preheat oven to 375 degrees.

In a large bowl, add cumin, thyme, yellow mustard, black pepper, McCormick’s Chipotle Pepper Spice, salt, oats, garlic, onions and celery. Mix until well combined. Next add the ground chicken and egg whites and mix with your hands until evenly distributed. Make racquetball size portions and place in muffin tins, sprayed with non-stick spray. Bake for 40 minutes.

Yields about18 muffins

Nutrition: 1 muffin
78 calories
2 g fat
4 g carbs
11 g protein

Servings are usually 2 for women and 4 for men.

Jamie Eason and a deck of cards…

By now I assume you know I like Jamie Eason (despite my bf’s love of her ass).  I found this on youtube.  Jamie made this video in her hotel room while at the Arnold.  This is her fun routine for getting in a workout when you don’t have a gym!  Grab a deck of cards and “gamble”!

The Arnold is the Arnold Classic annual bodybuilding competition named after Arnold Schwarzenegger.  The world’s top professional female athletes in bodybuilding, fitness, and figure will be showcased  in the Figure International, Fitness International, and Ms. International contests.  These competitors present three distinct styles of athleticism, physical symmetry, and agility.  The Arnold rivals the Mr. Olympia/Miss Olympia competition in popularity and importance.

Day in the life of Jamie Eason

On the Oxygen Magazine website there is a section that details what the covergirls eat in day and what exercise routines they do.  Jamie Eason (the carrot cake bar girl) was on last month’s cover so click here eason(http://www.oxygenmag.com/eason3 ) and you can see what she eats in a day -which is a lot of food- and what her routines are.  She also has a recipe for Chocolate Mug Cake.

Chocolate Mug Cake
Ready in 10 minutes • Makes 1 serving

• 4 tbsp oat flour (ground oatmeal)
• 4 tbsp Splenda
• 2 tbsp baking cocoa
• 2 egg whites (3 tbsp liquid egg whites)
• 3 tbsp skim milk
• 3 tbsp baby applesauce (look for the variety with the lowest natural sugar)
• Dash vanilla extract

1. To a large coffee mug add oat flour, Splenda and cocoa and mix well. Add egg whites and mix well.
2. Add milk, applesauce and vanilla and mix well until combined. Place mug in microwave and cook for 3 minutes on high. Let cool for a few minutes before serving.

Nutrients per serving:
Calories: 190, Total Fats: 4 g, Saturated Fat: 1.5 g, Trans Fat: 0 g, Cholesterol: 0 mg, Sodium: 100 mg, Total Carbohydrates: 33 g, Dietary Fiber: 6 g, Sugars: 10 g, Protein: 12 g, Iron: 3 mg

Dear Diary

Dear Diary,

I had carrot cake again last night after dinner.  I don’t usually have dessert unless it’s carrot cake, so my bf suggested I try Jamie Eason’s carrot cake protein bar recipe from her website (Recipe video by Jamie: http://www.jamieeason.com/videos/view/?mid=26175_video_17) .  Then I asked what he was doing on her website…..ah, men.  But if you need motivation go to her website.  She looks amazing! 

So I had a healthy dinner, sausasage with low fat dressing caesar salad (no croutons or cheese) and blackberries.  I also had my protein shake and finally do not have sore muscles!

This morning I decided to weigh myself…and I’m at 163lbs!  Not bad, not bad.  And that was after a breakfast of 2 eggs, 1 toast, coffee and blueberries and black berries.  Oh, and I’m bloated since I got a visit from Aunt Flo.  So I’m going to try the carrot cake bar thing from Jamie’s website next week and give a review.

Jamie Eason’s “Oh Baby!” Carrot Cake Protein Bar

Non-fat no-stick spray
1 cup oat flour (ground oatmeal found in the health section of your grocery store)
2 tsp cinnamon
½ tsp baking soda
¼ tsp salt
1/8 tsp ground nutmeg
1/8 tsp allspice (optional – more like spice cake)
3 egg whites
¾ cup Splenda
½ cup fat free Ricotta cheese
2 4 oz. jars or packs of baby food carrots (instead of shredded carrots)
2 scoops vanilla whey protein (look for a low sugar, low fat and low carb variety)
1 cup quick cooking oats (optional for added carbs and energy)

Preheat oven to 350 degrees. Spray an 8 x 8 pyrex dish with non-stick butter spray.

In a large bowl, combine flour, cinnamon, baking soda, salt and nutmeg. In a medium bowl, mix egg whites, Splenda, ricotta and baby food until well combined. Add the wet ingredients to the flour mixture and mix well. Finally, fold in the quick cooking oats (optional) and stir until just combined.

Pour batter into the pyrex dish and spread evenly. Bake 25 – 30 minutes or until a toothpick comes out clean. Let cool and cut into 16 pieces – 4 x 4.

Nutrition: 2 small squares
94 calories (132 cal with oats folded in)
1.25 g fat (2 g fat with oats folded in)
10 g carbs (17 g carbs with oats folded in)
10 g protein (11 g protein with oats folded in)
